[A102] Zhenjiang Ribs*
Serving Portion: 2 to 3 persons
 
Method:
1. Heat oil. Saute garlic, shallots and ginger, add spare ribs to stir fry until meat almost cooked and meat surface turns white.
2. Pour in sauce, add rock sugar, tangerine peel and eight-star anise. Boil and cook over gentle heat for 50 minutes until sauce thickens. (Stir every 20 minutes to prevent ribs sticking to the bottom)

Ingredients: Spare ribs, Eight-Star anise, Garlic, Ginger, Shallot, Rock sugar, Dried tangerine peel, Zhenjiang vinegar, Water, Soy sauce, Shaoxing wine
