Serving Portion: 2 to 3 persons
1. Saute eggplant slices in heated oil until they are softened. Remove from pan to rest.
2. Heat oil and saute ginger, garlic, add marinated minced pork to stir fry until pork is cooked. Add red chili to stir fry.
3. Pour in sauce mixture and chili bean sauce, return eggplant slices to fry until sauce is reduced. Garnish with spring onion and serve.

Need ingredients: Sauce mixture: 1 teaspoon of oyster sauce, 1 teaspoon of soy sauce, 1/2 teaspoon of sugar, 1/4 teaspoon of salt, 200ml of water
